Turmeric Rice
Yields 4 servings
Ingredients
- 2 Tbsp. butter
- 1/2 onion, diced
- 1 garlic clove, minced
- 1 cup basmati rice
- 1 Tbsp. turmeric, ground
- 1 1/2 cups vegetable or chicken broth
- 1 bay leaf
- 1 tsp. thyme, dried
- Salt and pepper to taste
Instructions
- Using a medium saucepan, sauté the onion and garlic in 1 tablespoon butter until soft.
- Add the rice and turmeric and stir until combined.
- Add the broth, bay leaf, and dried thyme. Bring to a boil, cover, and simmer for 17 minutes or until stock is absorbed.
- Remove from heat, and stir in the remaining butter. Remove the bay leaf and serve.
