Braised Collard Greens

Serving size: 4 servings

Ingredients

  • 1-2 Tbsp. olive oil
  • 1/2 large onion, diced
  • 5-6 cloves garlic, minced
  • 1 stalk celery, diced
  • 2 Tbsp. apple cider vinegar
  • 1 tsp. red pepper flakes
  • 1 tsp. paprika
  • 1 tsp. dried oregano
  • Pinch of salt and pepper
  • 1 large bunch collard greens, about 6 cups chopped
  • 1 cup diced tomatoes
  • 1 cup vegetable stock
  • 1/4 cup cream
  • Hot sauce, optional

Instructions

  1. Preheat the oven to 350°F. Add oil to a cast iron skillet and heat on medium. Add onions and celery and cook until soft, approximately 2-3 minutes.
  2. Add garlic and cook an additional minute. Then, add vinegar and mix, scrapping any stuck bits from the skillet.
  3. Add spices and mix. Add collard greens and tomatoes and stir. Cover with an oven safe lid or aluminum foil and bake in the oven for 30 minutes.
  4. Remove from the oven and mix in the cream, then bake an additional 15 minutes.
  5. Remove from oven and season with salt and pepper. Serve as a side dish or on top of your favorite grain. Add hot sauce if you like spicy!
