Carrot Cake Energy Bites

Ingredients
- 1 cup pitted dates
- 1/2 cup old fashioned oats
- 1/4 cup pecans, chopped
- 1/4 cup chia seeds
- 2 medium carrots, finely diced
- 1 tsp. vanilla
- 3/4 tsp. cinnamon, ground
- 1/2 tsp. ginger, ground
- 1/4 tsp. turmeric, ground
- 1/4 tsp. salt
- Pinch of ground pepper
Instructions
- Using a food processor, combine the dates, oats, pecans, and chia seeds, then pulse until well combined and chopped.
- Add the finely diced carrots, vanilla, cinnamon, ginger, turmeric, salt, and pepper. Pulse until all ingredients are well combined and a paste begins to form.
- Roll the mixture into tablespoon sized balls. Refrigerate in a covered container for one week or freeze for up to three months.
