Carrot Cake Energy Bites

Yields 22 servings

Ingredients

  • 1 cup pitted dates
  • 1/2 cup old fashioned oats
  • 1/4 cup pecans, chopped
  • 1/4 cup chia seeds
  • 2 medium carrots, finely diced
  • 1 tsp. vanilla
  • 3/4 tsp. cinnamon, ground
  • 1/2 tsp. ginger, ground
  • 1/4 tsp. turmeric, ground
  • 1/4 tsp. salt
  • Pinch of ground pepper

Instructions

  1. Using a food processor, combine the dates, oats, pecans, and chia seeds, then pulse until well combined and chopped.
  2. Add the finely diced carrots, vanilla, cinnamon, ginger, turmeric, salt, and pepper. Pulse until all ingredients are well combined and a paste begins to form.
  3. Roll the mixture into tablespoon sized balls. Refrigerate in a covered container for one week or freeze for up to three months.

Nutrition per serving: 50 calories, 8 g carbohydrates, 2 g fat, 2 g fiber, 1 g protein, 30 mg sodium, 5 g sugar.
