Chocolate Quinoa Cake

Yields 12 servings

Ingredients

  • 2 cups cooked quinoa, cold
  • 3/4 butter, melted
  • 4 eggs
  • 1/3 cup milk
  • 1 1/2 tsp. vanilla extract
  • 1 cup white sugar
  • 1 cup cocoa powder
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup chocolate chips
  • 1/2 cup pecans, chopped, optional

Instructions

  1. Preheat the oven to 350°F. Oil a 9x12 cake pan and set aside.
  2. Using a food processor or blender, combine the quinoa, melted butter, eggs, milk, and vanilla until smooth.
  3. In a large bowl, whisk the sugar, cocoa powder, baking powder, baking soda and salt together. Add the quinoa mixture to the sugar mixture and combine. Fold in the chocolate chips and pecans then pour into the cake pan.
  4. Bake in the oven for 40-45 minutes, or until a toothpick inserted in the cake comes out clean. Let cool completely prior to cutting.
