Chocolate Zucchini Bread

Yields 12 servings

Ingredients

  • 1/2 cup butter, melted
  • 1/2 cup unsweetened cocoa powder
  • 1 1/4 cup all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 1 cup sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp. vanilla extract
  • 2 cups zucchini, grated
  • 2/3 cup semisweet chocolate chips

Instructions

  1. Preheat the oven to 350°F and set aside a 9x5 loaf pan dusted with cocoa powder.
  2. In a large bowl, whisk the flour, cocoa butter, baking soda, cinnamon and salt.
  3. In a separate bowl, stir together the sugar, egg, and egg yolk until smooth. Add the melted butter and vanilla and combine, then fold in the zucchini. Slowly add the flour mixture then fold in the chocolate chips.
  4. Transfer the batter to the loaf pan. Bake for 50 minutes or until a toothpick comes out clean. Remove from oven and let cool for 10 minutes prior to removing from the pan.
  5. Cut into 12 slices and serve.
