Flaxseed Mug Muffin

Ingredients

  • 1/4 cup ground flax
  • 1/2 tsp. baking powder
  • 1 tsp. cinnamon
  • Pinch of nutmeg
  • 1 large egg
  • 1 tbsp. molasses
  • 1 tsp. oil
  • 1/2 tsp. vanilla extract
  • 1-2 tbsp. mini chocolate chips, berries or chopped dried fruit, optional

Instructions

  1. Combine all ingredients in a mug. Microwave on high for 1 minute. If desired, enjoy with butter, jelly or nut butter.

Nutrition per serving: 250 calories, 28 g carbohydrates, 12 g fat, 9 g fiber, 10 g protein, 75 mg sodium, 16 g sugar.
