Ginger-Lime Fruit Salad

Yields 4 servings

Ingredients

  • 1 cup ripe mango, chopped
  • 1 cup strawberries, quartered
  • 1/2 cup blueberries
  • 1 tsp. lime rind, grated
  • 1 Tbsp. lime juice, fresh
  • 1/2 tsp. ginger, grated

Instructions

  1. Combine prepared fruits, lime rind, lime juice, and grated ginger. Gently toss and serve or refrigerate until use. Feel free to add other fruits to the mix!

Nutrition per serving: 50 calories, 12 g carbohydrates, 2 g fiber, 1 g protein, 9 g sugar.
