Greek Salad with Edamame

Yields 4 servings

Ingredients

  • 1/4 cup red wine vinegar
  • 3 Tbsp. extra virgin olive oil
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 8 cups romaine, chopped
  • 16 oz. frozen edamame, shelled and thawed
  • 1 cup cherry or grape tomatoes, halved
  • 1/2 English cucumber, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh basil, chopped
  • 1/4 cup Kalamata olives
  • 1/4 cup red onion, diced

Instructions

  1. In a large bowl, whisk the vinegar, oil, salt, and pepper.
  2. Add the romaine, edamame, tomatoes, cucumber, feta, basil, olive and onion and toss to coat salad then serve.

Nutrition per serving: 350 calories, 26 g carbohydrates, 15 mg cholesterol, 21 g fat, 9 g fiber, 18 g protein, 530 mg sodium, 5 g sugar.
