Greek Salad with Edamame
Yields 4 servings
Ingredients
- 1/4 cup red wine vinegar
- 3 Tbsp. extra virgin olive oil
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 8 cups romaine, chopped
- 16 oz. frozen edamame, shelled and thawed
- 1 cup cherry or grape tomatoes, halved
- 1/2 English cucumber, sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh basil, chopped
- 1/4 cup Kalamata olives
- 1/4 cup red onion, diced
Instructions
- In a large bowl, whisk the vinegar, oil, salt, and pepper.
- Add the romaine, edamame, tomatoes, cucumber, feta, basil, olive and onion and toss to coat salad then serve.
