Hawaiian Coleslaw

Serving size: 6 servings

Ingredients

  • 1 lb. cabbage, finely shredded or 16 oz. packaged coleslaw mix
  • 1-15 oz. can crushed pineapple, drained
  • ½ cup onion, finely chopped
  • ½ cup mayonnaise
  • ¼ cup apple cider vinegar
  • 2 Tbsp. brown sugar
  • 1 Tbsp. cilantro, fresh
  • ½ tsp. salt
  • ¼ tsp. ground black pepper

Instructions

  1. In a medium bowl, mix cabbage, pineapple and onion together.
  2. In a separate bowl, whisk mayo, vinegar, brown sugar, cilantro, salt, and pepper until smooth.
  3. Pour dressing over the coleslaw mixture and toss to coat. Refrigerate until serving.

Nutrition per serving: 21 calories, 21 g carbohydrates, 10 mg cholesterol, 14 g fat, 3 g fiber, 2 g protein, 330 mg sodium, 17 g sugar.
