Healthy Granola Bars

Yields 32 servings

Ingredients

  • 2 1/2 cups oats
  • 1 1/2 cups quinoa, uncooked
  • 1 cup almonds, slivered
  • 1/3 cup chia seeds
  • 1 cup peanut butter crunchy
  • 1/2 cup honey
  • 1/4 cup coconut oil, melted
  • 1/2 cup flaxseed meal
  • 1 tsp. salt
  • 2 cups chocolate chips

Instructions

  1. Preheat oven to 350°F. Set aside a 12x18” baking pan.
  2. Place the oats, quinoa, almonds and chia seeds evenly on a rimmed baking sheet. Toast for 15 minutes or until golden brown.
  3. In a large bowl, mix the peanut butter, honey and melted coconut oil. Add the toasted ingredients, along with the flaxseed meal and salt, and combine.
  4. Press mixture into a 12x18” baking pan. Bake for 5 minutes or until bars are set. Remove from oven and sprinkle with chocolate chips. Return to oven for 5 minutes or until chocolate chips are melted. Remove from oven and spread chocolate over the bars evenly.
  5. Place in the freezer until the chocolate is firm, about 20 minutes. Then cut into bars and enjoy.
