Herbed Spinach and Kale Balls

Yields 12 servings

Ingredients

  • 1, 16 oz. package frozen chopped spinach, thawed & drained
  • 1 cup onion, finely chopped
  • 5 Tbsp. olive oil
  • 1 tsp. olive oil
  • 2 large eggs, whisked
  • 1, 16 oz. package frozen kale, thawed & drained
  • 1 cup bread crumbs
  • 1/4 cup Parmesan cheese, grated
  • 1/2 tsp. salt
  • 1/2 tsp. garlic powder
  • 1/2 tsp. dried thyme, ground
  • 1/2 tsp. dried sage, ground
  • 1/2 tsp. dried rosemary, ground
  • 1/2 tsp. dried oregano, ground
  • 2 pinches black pepper, ground

Instructions

  1. Preheat the oven to 350°. Set aside a baking sheet lined with parchment paper or sprayed with cooking spray.
  2. In a large bowl, combine the spinach, onion, olive oil and egg. Then add the kale, bread crumbs, Parmesan cheese, and seasonings. Mix until thoroughly combined.
  3. Shape mixture into 1 ½ inch balls and place on the prepared baking sheet.
  4. Bake in the oven for 15 minutes, remove and flip and bake an additional 10-20 minutes or until lightly browned. Remove from oven and serve.
