Kohlrabi and Celery Root Puree

Yields 6 servings

Ingredients

  • 1/4 lb. Yukon gold potatoes, peeled & diced
  • 1 lb. kohlrabi, peeled & cut into large pieces
  • 1 large celery root, peeled & cut into large pieces
  • 1-2 Tbsp. plain yogurt
  • 1 Tbsp. butter
  • Salt & pepper to taste

Instructions

  1. Steam the potatoes, kohlrabi and celery root until tender, about 15-20 minutes.
  2. Remove from heat and let sit for 5 minutes. Place vegetables in a large bowl and mash with a potato masher. Add the yogurt and butter, then season with salt and pepper. Serve immediately.
