Kohlrabi and Celery Root Puree
Yields 6 servings
Ingredients
- 1/4 lb. Yukon gold potatoes, peeled & diced
- 1 lb. kohlrabi, peeled & cut into large pieces
- 1 large celery root, peeled & cut into large pieces
- 1-2 Tbsp. plain yogurt
- 1 Tbsp. butter
- Salt & pepper to taste
Instructions
- Steam the potatoes, kohlrabi and celery root until tender, about 15-20 minutes.
- Remove from heat and let sit for 5 minutes. Place vegetables in a large bowl and mash with a potato masher. Add the yogurt and butter, then season with salt and pepper. Serve immediately.
