Parmesan and Parsley Roasted Almonds

Yields 6 servings

Ingredients

  • 1 1/2 cup raw, unsalted almonds
  • 4 Tbsp. parmesan cheese, grated
  • 1 Tbsp. extra virgin olive oil
  • 1/2 tsp. garlic powder
  • 1 tsp. fresh parsley, chopped
  • Dash of salt

Instructions

  1. Preheat the oven to 325° F. Set aside a rimmed baking sheet lined with parchment paper.
  2. In a large bowl, toss the almonds with the extra virgin olive oil, garlic powder, parsley, salt and 3 tablespoons parmesan.
  3. Pour the almond mixture on the baking sheet and bake for 10 minutes.
  4. Remove from oven and cool for 10 minutes then sprinkle remaining 1 tablespoon of Parmesan cheese on top of almond mixture. Store in an airtight container.

Nutrition per serving: 240 calories, 9 g carbohydrates, 5 mg cholesterol, 21 g fat, 4 g fiber, 9 g protein, 85 mg sodium, 1 g sugar.
