Roasted Cabbage Wedges
Yields 6 servings
Ingredients
- 1 Tbsp. plus 2 more Tbsp. extra-virgin olive oil
- 1 medium head cabbage, cut into 1 inch thick rounds
- Salt and pepper to taste
- 1 tsp. caraway or fennel seeds
Instructions
- Preheat the oven to 400°F. Brush a rimmed baking sheet with 1 tablespoon oil. Place the 1 inch cabbage rounds in single layers and brush them with remaining oil.
- Season with salt, pepper and caraway or fennel seeds. Roast until cabbage is tender and golden, about 40-45 minutes. Serve immediately.
