Smashed Cucumbers with Turmeric, Coconut & Peanuts

Yields 4 servings

Ingredients

  • 1 English hothouse cucumber
  • 1 Tbsp. fresh lime juice
  • Salt to taste
  • 2 Tbsp. coconut oil
  • 1/4 cup, unsalted peanuts, coarsely chopped
  • 1/4 cup unsweetened coconut flakes
  • 1/2 tsp. turmeric, ground
  • Pepper to taste

Instructions

  1. Chop the cucumber into 1 inch thick slices. Then using a heavy pan, smash the cucumbers.
  2. Place the cucumbers in a medium bowl, add the lime juice and 1/4 tsp. salt and toss. Let sit for 5-30 minutes. Next drain the liquid and transfer to a serving bowl.
  3. In a small skillet, heat the coconut oil over medium heat. Add the peanuts and cook until golden brown, around 2 minutes. Add the coconut, turmeric, and some black pepper. Cook for 30 seconds or until peanuts are lightly toasted. Remove from heat and pour over cucumbers. Season with salt and pepper as needed. Serve immediately.
