Spiced Carrot and Chickpea Fritters

- 1 15 oz. can chickpeas
- 1/3 cup brown teff flour
- 3 medium carrots, grated
- 2 eggs
- 1/2 cup fresh cilantro, chopped finely
- 1 tsp. honey
- 1 tsp. baking powder
- 1/2 tsp. cinnamon
- 1 tsp. paprika
- 1 tsp. coriander, ground
- 1 tsp. cumin
- Drain and rinse chickpeas. Place in a medium bowl and mash with a fork.
- Add remaining ingredients to the chickpeas and mix well.
- Over medium heat, add olive oil to a non-stick skillet. Add a heaping tablespoon of the chickpea mixture to the skillet, flatten with a fork and cook on each side for 1-2 minutes or until golden brown.
