Spiced Carrot and Chickpea Fritters

  • 1 15 oz. can chickpeas
  • 1/3 cup brown teff flour
  • 3 medium carrots, grated
  • 2 eggs
  • 1/2 cup fresh cilantro, chopped finely
  • 1 tsp. honey
  • 1 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1 tsp. paprika
  • 1 tsp. coriander, ground
  • 1 tsp. cumin


  1. Drain and rinse chickpeas. Place in a medium bowl and mash with a fork.
  2. Add remaining ingredients to the chickpeas and mix well.
  3. Over medium heat, add olive oil to a non-stick skillet. Add a heaping tablespoon of the chickpea mixture to the skillet, flatten with a fork and cook on each side for 1-2 minutes or until golden brown.

Nutrition per serving: 140 calories, 21 g carbohydrates, 55 mg cholesterol, 3.5 g fat, 6 g fiber, 7 g protein, 140 mg sodium, 4 g sugar.
