Sweet and Spicy Jicama Salad
Yields 6 servings
Ingredients
- 2 small jicama, peeled & cut into strips
- 2 navel oranges, peeled & cut into chunks
- 1 large red bell pepper, diced
- ½ hothouse cucumber, diced
- 3 small sweet yellow peppers, sliced
- 2 small sweet orange peppers, sliced
- 4 radishes, thinly sliced
- 3 Thai chili peppers, minced
- ½ jalapeno pepper, diced
- ½ bunch cilantro, chopped
- 1 lemon, juiced
- Black pepper to taste
Instructions
- Add all ingredients to a large bowl and toss. Cover the bowl and refrigerate for at least 30 minutes to let the flavors blend. Then serve and enjoy!
