Sweet Potato Bake
Yields 8 servings
Ingredients
- 3 cups mashed sweet potatoes, cold
- 1/2 cup sugar
- 3 large eggs
- 1/2 cup milk
- 1/4 cup butter, softened
- 1 tsp. salt
- 1 tsp. vanilla extract
- 1/2 cup brown sugar, packed
- 1/2 cup pecans, chopped
- 1/4 cup all-purpose flour or gluten-free substitute
- 2 Tbsp. butter, cold
Instructions
- Preheat oven to 325°F. Set aside a greased 2-quart baking dish.
- In a large bowl combine the sweet potato, sugar, eggs, milk, butter, salt and vanilla until well mixed. Transfer to the baking dish.
- Combine the brown sugar, pecans and flour in a small bowl. Cut in the cold butter until crumbly. Sprinkle evenly over the sweet potato mixture and bake, uncovered for 45-50 minutes.
